Is cooking at home necessarily cleaner and more hygienic than eating out? A survey report from the U.S. Centers for Disease Control and Prevention (CDC) indicates that many people's kitchen hygiene habits at home actually fall short of standards, such as leaving ingredients at room temperature for too long instead of refrigerating them.
The CDC's "Morbidity and Mortality Weekly Report," released on the 3rd, noted that research shows many Americans do not follow proper hygiene standards when cooking at home, potentially allowing bacteria to enter the body through food.
This study on food hygiene habits was conducted via questionnaires between 2006 and 2008, with a total of 13,274 participants. The questionnaire, designed by the Los Angeles County Department of Public Health, covered topics such as food storage practices, whether countertops were properly cleaned, how cutting boards were washed after handling raw chicken, the handling of raw eggs, the separation of raw and cooked foods, and handwashing frequency.
The results showed that 34% of respondents received an "A" grade, 27% received a "B," 25% received a "C," and 14% scored poorly with a "D."
Additionally, the survey found that 36% of respondents said their refrigerators lacked accurate temperature displays. Another 28% admitted they did not trim their nails or remove jewelry before cooking.
Seventeen percent of respondents reported having fallen ill after eating food prepared at home.
A striking 27% also revealed that during cooking, some partially prepared ingredients were left at room temperature instead of being refrigerated.
As for how clean their kitchens really were, 9% of respondents reported having flies, 6% admitted to cockroaches, and 5% said they had mice. 990905 (Central News Agency archive photo)
