Reused Frying Oil in Fries and Fried Chicken Worsens Inflammation and Breathing Issues

High-fat foods not only increase the risk of breast and colorectal cancer, but research from National Taiwan University has found that cooking oil used in frying can easily enhance inflammatory responses. The number of cases of allergic diseases such as asthma in the country has been increasing year by year. Besides environmental factors like air pollution, diet may be an important factor.
Jiang Bolun, an associate professor at the Institute of Clinical Medicine at National Taiwan University College of Medicine, pointed out that domestic research on cooking oil used in frying has been conducted in the past. Animal experiments have shown that repeatedly used frying oil may trigger autoimmune diseases. With the Westernization of the national diet, the fat content in food has increased, especially fried foods like fries and fried chicken, which are favored by children. This has led researchers to believe that the increase in allergic diseases in children may be related to diet.
This research, conducted by Jiang Bolun and Professor Lin Tangfeng from the Department of Agricultural Chemistry at National Taiwan University, involved feeding 13-week-old mice with 5% and 15% soybean oil and repeatedly used frying oil. The mice were then sensitized with ovalbumin. After three months of feeding, it was found that mice fed with 1596 frying oil had higher levels of immunoglobulin E and G1, indicating an increase in allergic antibodies. Additionally, inflammatory substances related to asthma—prostaglandin E2 and leukotriene B4—also increased, showing that frying oil can enhance inflammatory responses. If asthma patients indulge in fried foods, their condition may become more severe once an attack occurs.
He pointed out that there are three major dietary taboos for allergy patients: avoid high-fat, high-calorie, and cold foods. It is best for children with allergies to pay more attention to these dietary restrictions. As the Westernization of the national diet is an unstoppable trend, Jiang Bolun noted that research on adding antioxidants to the diet of allergy patients is currently underway.
