Research has found that children who frequently consume processed meat products such as smoked meat, sausages, cured meats, and salted fish have an increased risk of developing leukemia. Conversely, children who regularly consume vegetables or soy products have half the risk of developing cancer compared to those who eat fewer vegetables.

A group of researchers from the Harvard School of Public Health discovered that among 515 Taiwanese children and adolescents, those who consumed these processed meat products more than once a week had a 74% higher chance of developing leukemia compared to the general population.

Nitrites Easily Cause Cancer, Children Have Poor Detoxification Ability

Experts explain that during the processing of these meats, manufacturers add not only salt and sugar but also nitrites. Nitrites can lead to the formation of carcinogenic nitrosamines. Vegetables and soy products contain antioxidants that help neutralize these carcinogens.

Lin Jieliang, Director of the Clinical Toxicology Department at Linkou Chang Gung Hospital, stated that nitrosamines can cause various cancers, including nasopharyngeal cancer, colorectal cancer, and even leukemia, with children being particularly sensitive. Lin emphasized that children are still in the developmental stage and have weaker detoxification abilities. They should consume fresh fish, meat, vegetables, and fruits, and avoid processed foods. Adults should also avoid these foods or boil them before consumption to reduce nitrosamines.

Additionally, it is best to avoid high-temperature cooking, as it can lead to the production of more nitrosamines. Lin noted that bacteria in the stomach can also break down nitrosamines, so it is advisable to drink more yogurt to increase beneficial bacteria in the gastrointestinal tract. When consuming these foods, pairing them with vegetables and fruits, as well as drinking green tea, can help reduce the formation of nitrosamines.

Qiu Zongjie, Director of the Transfusion Medicine Department at Taipei Veterans General Hospital, stated that leukemia is the most common cancer among children and adolescents. This is partly due to genetic mutations and partly because the immune systems of children in this age group are still developing, making them more susceptible to infections. The hematopoietic system, which has a high daily metabolic rate, is more likely to reflect these infections. Qiu pointed out that the Harvard epidemiological study reflects a phenomenon, but the underlying causes need further investigation. For example, understanding the socioeconomic status of the children's parents is important, as lower socioeconomic status might correlate with poorer living environments and potential industrial pollution, which should be considered as environmental factors.
