As the hot pot season arrives in autumn and winter, many people particularly enjoy milk-based broths. But did you know whether these milk hot pots are actually made with real milk? Wang Steak's "Gather" hot pot chain has been accused by customers of not using fresh milk in its milk hot pot. The company admitted that the broth is made with powdered milk. What’s the difference in taste between using real milk and substitutes? CTS reporters investigate.
Wang Steak's "Gather" hot pot has been criticized for not using fresh milk in its milk hot pot broth, despite staff claiming otherwise when customers order. When questioned, two employees insisted it was made with milk, but a third stammered nervously before admitting that unless customers specifically ask, they pretend it's a milk-based broth. The milk flavor in the hot pot can come from various ingredients—fresh milk, cream, powdered milk, or non-dairy creamer. A taste test was conducted with four milk broths made from these different ingredients. To cut costs, businesses often use powdered milk or non-dairy creamer.
Visually, the difference is noticeable—layers of film float on the surface of the broth. Broths made with fresh cream or milk taste smoother but are more expensive. "Gather’s" milk hot pot set costs nearly NT$400, yet the broth is made with cheaper non-dairy creamer and powdered milk while being marketed as containing fresh milk. After being exposed, Wang Steak responded that it would rename the dish "milky hot pot" starting November 17.
